BONZA TAMARILLO BEAN SALSA

This accompanies grilled fish or chicken really well and is a little gem!
Ingredients:
3/4 cup (180 ml) black beans or other beans cooked
1/2 red capsicum, diced
1 cup tamarillo or tomato chopped
1 jalapeno pepper, chopped finely
3 – 5 garlic cloves
1/2 cup (120 ml) red onion, chopped finely
2 Tbsp (30 ml) lime or lemon juice
2 Tbsp (30 ml) waihi bush organics flax seed oil - Original
1 tsp (5 ml) fresh ginger, chopped fi ne
1/2 tsp (2 ml) honey or raw sugar
½ tsp (2 ml) cayenne or chilli powder
salt and pepper to taste
1/4 cup (60 ml) fresh coriander leaves, chopped
How to make:
Whisk together lime or lemon juice, sweetener, WB Flax Seed Oil Original, ginger and salt. Combine beans, tamarillo or tomato, peppers, and onion. Stir dressing into bean mixture.
Add coriander. Serve with grilled chicken or fi sh. Yield Makes 3 cups.
