Homemade Baked Falafel

This delicious gluten-free and vegan recipe is great to serve for a shared lunch, bring a plate or your school lunch box. 

Ingredients:

  • 1 can Organic Chickpea rinsed and drained
  • 2 handfuls of spinach leaves
  • 1 handful of coriander
  • 1 handful of parsley
  • Juice of one lemon
  • 2 Tablespoon extra virgin olive oil
  • Pinch of sea salt and pepper
  • 2 Tablespoon Waihi Bush golden flaxseed fibre
  • 1 teaspoon baking powder

How to make:
Add all ingredients to food processor and process until mixture is fully combined and comes together
Remove blade, take a handful of the mixture and make into small patties
Place on lined baking tray and place in a preheated oven 170 degrees and bake about 7-8 minutes or until golden and repeat on other side.
Place on a salad or make bun-less burgers and add favourite toppings- I added avocado, tomatoes, grated carrot.
