Flax pancakes

Flax pancakes

This is great for breakfast or mid morning snack for the kids in the holidays.

Ingredients:

  • 3 cups buckwheat or other all-purpose flour
  • 1/2 cup Waihi Bush organics flax fibre 
  • 1/2 tsp baking powder
  • 1/2 tsp  baking soda
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 2 tbsp melted butter or cold pressed veg oil
  • 1 egg
  • 3-4 cups buttermilk to preferred consistency

How to make:
Place all the dry ingredients in a bowl and mix in the wet ingredients to make a pourable mixture. Cook on hotplate or pan.
