SPICY CARROT AND LENTIL SOUP

Soups are a great lunchtime favourite and what's even better is you always finish off with a waihi bush organics flax seed oil drizzle!
Ingredients:
Olive oil to cook
1 onion
2 tsp finely chopped gingerroot
1 1/2 ground cardamom
3 carrots grated
1/2 C orange lentils
5 C vegetable stock
Salt and freshly ground pepper
Waihi bush organic farm oil of your choice to drizzle
How to make:
Finely chop onion, saute with ginger in oil/butter until soft but not brown and then stir in cardamom and cook until frothy.
Add grated carrots, lentils, and stock to spicy mix & bring to the boil
Cover and simmer for 20 – 25 mins or until lentils are tender
Season with salt and pepper, drizzle with waihi bush organics flax seed oil
Serve hot with a nice bread
Serves 4 – 5
Note: Double the recipe and take leftovers to school
