Sweet Vege Couscous
Yummy we love this recipe as it's an 'all in one bowl' quick tasty easy to make lunch! Great if you have to bring a plate too!
Ingredients:
- saffron threads (NZ grown)
- 3 T boiling water
- 1 tbsp waihi bush organics Flaxseed Oil
- 1 red onion
- 2 garlic cloves crushed and finely diced
- 1-2 fresh red chillies
- 1/2 tsp ground ginger or crushed fresh
- 1/2 tsp ground cinnamon
- 500gm chopped
How to make:
This grain-like pasta cooks in the blink of an eye and is absolutely fool proof. What we buy in the shops is couscous that has already been steamed and dried for us. It only needs to be mixed with boiling water and allowed to sit undisturbed for a few minutes before being ready to eat. One cup of dried couscous makes about four cups of cooked couscous.
Once ready add in all the other ingredients and stir. Serve warm or chilled.
