Tzatziki

Tzatziki makes a brilliant party dip served with salads or kebabs. It is a classic dip (pronounced zat-zee-key or chat-chee-kee, according to who you listen to)and is Greek. Great served with nachos or cucumber, celery and carrot sticks.
Ingredients:
- 2 cups Yoghurt (greek makes the best!)
- 1 Cucumber
- 3 cloves Garlic, crushed
- 1/2 cup Waihi bush organics flax seed oil
- this works well with Chia seed oil too
- 1/2 Organic lemon, juiced
- 1 teaspoon Sea salt
- 2 Tablespoon Fresh dill
How to make:
Chop or shred cucumber. Blend all ingredients with a fork. Refrigerate for at least one hour. Serve with pita bread. Tzatziki can also be used as a vegetable dip or as a side dish with barbequed lamb, chicken or turkey.
Yield Serves 4.
