Use any vegetables you have that are in the cupboard or in season. We used leeks, tomatoes, zucchini and baby spinach.
How to make: Preheat Oven to 180 deg C Grease a medium round quiche dish (or pie dish) Mix all the ingredients together and pour in. Cook for 1 hour, check at 45 mins or until eggs completely cooked through. Serve with a salad and drizzle of your favourite oil
