Vegetable Quiche (GF)

Ingredients:

  • 1 cup of grated cheese
  • 5 eggs
  • 1/2 cup of spelt or gluten-free flour
  • 1/4 cup of Golden Flax Fibre
  • 1 1/2 cups of milk
  • Salt and Pepper to taste.
  • Use any vegetables you have that are in the cupboard or in season. We used leeks, tomatoes, zucchini and baby spinach.

How to make:
Preheat Oven to 180 deg C
Grease a medium round quiche dish (or pie dish)
Mix all the ingredients together and pour in. Cook for 1 hour, check at 45 mins or until eggs completely cooked through. Serve with a salad and drizzle of your favourite oil
