NUTTY FLAX PESTO GLUTEN-FREE

Pesto is great for Lunch or dinner! Just use on bread as a spread or mixed through pasta.
Ingredients:
4 cloves Garlic, crushed
2 cups (480 ml) Fresh Coriander or Basil, chopped
1/4 cup (60 ml) waihi bush organics flax fibre
1/3 cup (80 ml) Parmesan Cheese
1/2 cup (120 ml) waihi bush organics flax seed oil
1/2 cup (120 ml) Olive Oil
Salt and pepper to taste
How to make:
Blend all ingredients in food processor or blender for 20 seconds or until desired consistency is reached. This sauce is delicious on pasta (for 500g cooked pasta). Yield 3 servings.
