Roast Vegetable Salad with Super Seed Oil dressing

Ingredients

Dressing:

½ c Waihi Bush Super Balance – blend of Hemp Seed oil and Flax Seed oil
¼ c Waihi Bush Apple Cider Vinegar
1 tablespoon honey
1 teaspoon Dijon Mustard
1 clove of garlic, minced
Season to taste
Whisk to combine or shake in a jar

Vegetables:

Vegetables to roast – zucchini, orange kumara, purple kumara, cauliflower florets, red onion, red capsicum, carrot, beetroot (or vegetables of your liking)

Directions

Toss together with spinach leaves and crumbled feta, and a little of the dressing.
Dry toast some pumpkin and sunflower seeds and sprinkle these overtop of the salad to serve, along with a good drizzle of more of the dressing.

Serve warm or cold
