Waihi Bush Super Seed Crackers

Ingredients:

1 ½ C sunflower seeds
½ C pumpkin seeds
1 C sesame seeds
1/3 C Waihi Bush Golden Linseed
2 Tbsp Waihi Bush Golden Flax Fibre or Waihi Bush Flax Fibre Original
1 Tbsp Poppy seeds (optional)
1 Tbsp Arrowroot (optional)
2 ¼ C water
½ tsp salt
1-2 tsp dried herbs/seasoning (optional)

 Method:

Preheat oven to 150 degrees Celsius and cover baking sheet/s with baking paper.

Mix all ingredients together in a large bowl and set aside for 20 mins to allow mixture to thicken to a gel-like/gooey consistency.

Transfer mixture to baking sheet (you can give them a spray with non stick); spread mixture in a thin layer; you may need two trays.

Bake for about an hour; adjust baking time depending on how browned and crispy you want your crackers.  Half way through cooking, remove trays from oven and cut crackers in to squares using pizza cutter or sharp knife and return to oven, otherwise break up into pieces when cooled.

Store in airtight container.

Enjoy as a healthy snack or delicious addition to your platters.
