Spicy Carrot Flax Muffins

Ingredients:

  • 1 1/2 cups organic Spelt flour
  • 1/4 cup waihi bush organics Flax Seed Fibre
  • 3/4 cup  oat bran
  • 1 cup  brown sugar
  • 2 tsp  baking soda
  • 1 tsp  baking powder
  • 1/2 tsp  salt
  • 2 tsp cinnamon or mixed spice
  • 1 1/2 cups  carrots, finely shredded
  • 2 apples, grated
  • 1/2 cup  Raisins (optional)
  • 1 cup  Nuts, chopped
  • 3/4 cup Milk
  • 2 Eggs, beaten
  • 1 tsp Vanilla
  • 2 Tbsp  butter or cold pressed Vegetable oil

How to make:
Mix together flour, flaxseed fibre, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins (if desired) and nuts.
Combine milk, beaten eggs, vanilla, and oil. Pour liquid ingredients into dry ingredients. Stir until ingredients are just moistened. Do not over mix.
Fill muffin cups 3/4 full. Bake at 180°C (350°F) for 15-20 minutes.
