Creamy Pumpkin Seed Oil Pasta

Ingredients
- 300g fettuccine
- 1 cup baby spinach
- ½ cup parmesan
- ½ cup cream
- 2 cloves garlic
- 2 tbsp Waihi Bush Organics Pumpkin Seed Oil
- Zest of one lemon
- Toasted pumpkin seeds
- Salt & pepper
Instructions
- Cook pasta according to packet instructions.
- Gently heat the cream and garlic until fragrant.
- Stir through parmesan until melted.
- Toss the cooked pasta through the sauce with the spinach.
- Remove from the heat.
- Finish with your Waihi Bush Organics Pumpkin Seed Oil, lemon zest and toasted pumpkin seeds.
- Season to taste.
Serving suggestion
Serve alongside grilled chicken or roasted vegetables.
For more of a pumpkin boost, puree some cooked pumpkin and add at step 2 with the cream and garlic.
