Crispy Smashed Potatoes with Garlic Flax Seed Oil

Instructions

  1. Boil the baby potatoes until fork tender (approximately 20 minutes).
  2. Drain and allow to steam dry for 5 minutes.
  3. Place onto a lined baking tray and gently squash each potato using the back of a glass.
  4. Lightly spray or brush with cooking oil suitable for roasting and bake at 220°C for 25–30 minutes until crisp and golden.
  5. Meanwhile, combine Waihi Bush Flax Seed Oil Garlic, minced garlic and parsley.
  6. Once the potatoes are cooked, drizzle generously with the garlic flax oil mixture.
  7. Season with salt, pepper and parmesan before serving.
