Crispy Smashed Potatoes with Garlic Flax Seed Oil

Ingredients
- 800g baby potatoes
- 2 tbsp Waihi Bush Organics Flax Seed Oil Garlic
- 2 cloves garlic, finely minced
- 2 tbsp fresh parsley, chopped
- Sea salt
- Cracked black pepper
- Fresh parmesan (optional)
Instructions
- Boil the baby potatoes until fork tender (approximately 20 minutes).
- Drain and allow to steam dry for 5 minutes.
- Place onto a lined baking tray and gently squash each potato using the back of a glass.
- Lightly spray or brush with cooking oil suitable for roasting and bake at 220°C for 25–30 minutes until crisp and golden.
- Meanwhile, combine Waihi Bush Flax Seed Oil Garlic, minced garlic and parsley.
- Once the potatoes are cooked, drizzle generously with the garlic flax oil mixture.
- Season with salt, pepper and parmesan before serving.
