Ingredients
- 1 cup cooked quinoa
- 1 cup roasted kumara
- Cherry tomatoes
- Cucumber
- Baby spinach
- Kalamata olives
- Feta
- 1 tbsp Waihi Bush Organics Hemp Seed Oil
- Juice of half a lemon
- Fresh parsley
- Salt & pepper
Instructions
- Divide the quinoa between two bowls.
- Arrange roasted kumara, tomatoes, cucumber, spinach, olives and feta over the top.
- Combine Hemp Seed Oil with lemon juice.
- Drizzle over the bowls just before serving.
- Finish with parsley, salt and pepper.
Tip
Add grilled chicken or falafel for extra protein.
