Ingredients

  • 1 cup cooked quinoa
  • 1 cup roasted kumara
  • Cherry tomatoes
  • Cucumber
  • Baby spinach
  • Kalamata olives
  • Feta
  • 1 tbsp Waihi Bush Organics Hemp Seed Oil
  • Juice of half a lemon
  • Fresh parsley
  • Salt & pepper

Instructions

  1. Divide the quinoa between two bowls.
  2. Arrange roasted kumara, tomatoes, cucumber, spinach, olives and feta over the top.
  3. Combine Hemp Seed Oil with lemon juice.
  4. Drizzle over the bowls just before serving.
  5. Finish with parsley, salt and pepper.

Tip
Add grilled chicken or falafel for extra protein.
