Summer Radish & Cucumber Salad
Ingredients:
2 C sliced radishes
½ tsp salt
1 C sliced red onion
1 C seeded and sliced cucumber
½ C Waihi Bush Flax Original or your favourite oil from the Waihi Bush range
2-3 Tbsp Waihi Bush Apple Cider Vinegar
1 tsp chopped fresh dill
1 clove minced garlic
½ tsp white sugar (or to taste)
Salt and Pepper (to taste)
Method:
Toss sliced radishes with salt and let stand for about 10mins. Drain off any liquid and transfer to large bowl.
Add sliced onion a cucumber.
In separate bowl, whisk together oil, vinegar, dill, garlic and sugar, and season to taste.
Por over vegetables and toss to combined.
Cover and refrigerate for at least an hour before serving.
