VEGAN AND GLUTEN FREE CHOCOLATE CHIP COOKIES

Ingredients:
2/3 cups chia seed flour
2/3 cups Waihi Bush Organics Golden Flax Fibre
2 Tbsp coconut flour
2 Tbsp almond butter
3 Tbsp pure maple syrup
2 Tbsp arrowroot powder
1 tsp pure vanilla extract
3 Tbsp Waihi Bush Organics Coconut Oil
2 Tbsp raw cacao powder
Pinch of pink Himalayan salt
Chopped raw chocolate
2 Tbsp Chia seeds
How to make:
In a small bowl cover chia seeds with water to soak
In a bowl add dry ingredients and mix
Add maple syrup, melted coconut oil, vanilla extract, and soaked chia seeds.
Add in chopped chocolate and mix through.
Mix with your hands to form a dough consistency.
Take a spoonful of the mixture and create a ball, place on a lined baking tray and press down with a fork.
Place in the oven at 170 degrees for 10 minutes
